Boa Noite! I hope you’ve had a fabulous weekend. Mine has been filled with rest and online church and these muffins that I haven’t made in ages. I had a hankering for bananas, a jar of peanut butter and time on my hands, so I took it upon myself to search the webs for some semblance of a recipe I once knew but couldn’t remember. The following recipe was the closest I could find, and I loosely stuck to it. I was kind of a messy baker today, but the end result was still pretty scrumptious. Could have done without the non-nutella coco hazelnut topping though. While I love this sugar-less (as in less than 23g per tablespoon [rude]) it didn’t fair so well atop these muffins. Flourless Peanut Butter Banana Muffins
1 cup of peanut butter
2 ripe bananas
1/4 c of honey
1 tsp baking soda
1 tsp extract (I used almond)
3 eggs
1/2 tsp salt
1 tsp cinnamon
bake at 350 for 18 minutes (or less)

PS ~ I’ve been feeling convicted about environmental things and composting these days, so I’m looking forward to scooping up one of those dope stainless steel compost buckets from Target in the near future.
Composting was so much easier in Eastern North Carolina when we just fed the dogs the scraps from our plates at the end of a meal… good times.

These look divine! They will be going on my “to try” list! We compost the other old-fashioned way–dump into a (plastic ice cream) container and after several days dig a hole and bury it. We call it the compost pile. It’s just a pile of dirt that we use for this. I dig it and turn it randomly and add it to the garden as needed. 😊
