My aunt gave me two very ripe bananas {which is how I prefer them}, and I had some buttermilk left over from my goat cheese biscuits to use up, so I made muffins. I was actually at her house to share some of the biscuits, so that worked out nicely. ha.
It was surprisingly hard to come by exactly what I was looking for, but this recipe from Pinterest was close enough and I just made a few tweaks: olive instead of canola oil, two eggs, no sugar, no extract, and only all purpose flour. I was experiencing a personal extract shortage when I made these; if I’d had some, I would have used it, but probably still left out the sugar . . .
