“flapjacks” {w/ sausage patties}

I’m not entirely sure what constitutes a “flapjack,” but from what I’ve seen they’re essentially a mix between a pancake and a granola bar . . .

The template I used for this recipe was actually for cookies, but I made a few tweaks to compensate for the absence of honey or syrup {which I didn’t have on hand} . . . mainly, pasting the dates and adding more oatmeal.

To be honest, I didn’t find these to be particularly palatable on their own {hence my reluctance to refer to them as cookies}, but they were surprisingly satisfying when paired with warm sausage patties . . .

For the date paste, pit and halve five delectable medjool dates and boil with approximately four oz of water and a slice of butter. As the dates began to soften and decompose, reduce the heat and add a bit of vanilla extract. I also added a bit of nutmeg and half a pack of instant espresso. Set the paste aside to cool for a hot second {pa dum ching}.

In a large bowl mash two medium-to-large bananas with a fork, and add the date paste. Once the paste and bananas have been basically incorporated, incrementally add up to 1 + 2/3 c of old fashioned oats.

Form into flat rounds and bake on 325 for 16-18 minutes.
