Another cobbled together cookie endeavor . . . using this recipe for ratio research. This experiment started out as an in-between-grocery-trips pantry puzzle, and I was pleasantly surprised by both the flavor and the texture. I think I may even bake a batch for Friendsgiving dinner this Thursday. Enjoy!

almond extract & olive oil cookies!

preheat oven to 350°F.

{i used a dark nonstick pan lined with parchment paper.}

in a large bowl, combine the following:

2 tbsp room temperature butter + 2 tbsp extra virgin olive oil + 3/4 c dark brown sugar

1 tsp sea salt + 1 room temperature egg + 1/2 tsp almond extract

1-1/2 c all purpose flour + 1/2 tsp baking soda + 1/2 tsp nutmeg

roll dough into balls {roughly 1-1/2 tbsp} and softly press them onto the cookie sheet.

bake for 13-14 min.
